I love cooking on weekends :) And then eating with a cool glass of wine, it is just nice! So this Sunday Listy and I decided to cook with what ingredients we had at the moment: pork, carrots, onion, and potatoes.
I had mine with red wine ^^
If you want to know how to make this, it is very easy.
What you need:
- pork, as much as you like
- carrots
- potatoes
- crushed dry rosemary herbs
- onion
- salt
- pepper
- olive oil
- a baking tray for the oven
- aluminium foil
- Prepare the pork. Make slits on the meat and season with salt, pepper, and send it to boil with some crushed dry rosemary herbs. Remove the meat when it is half-cooked.
- Peel potatoes and cut them into wedges. Season the wedges with salt and pepper, then deep fry it until almost golden.
- Peel carrots and season with a little pepper.
- Chop onions into slightly large slices (approximately the size of a 50 cent coin).
- Mushrooms taste very well in this dish so if you have them, wash them. In my case, I didn't have any at the moment :(
- Pre-heat your oven at 200 degrees.
- Cover a baking tray with aluminium foil, then give it some oil (not too much!!!). Arrange your meat, potatoes and carrots on the tray and put olive oil above everything (as much as you like but not excessively of course) and also sprinkle in more good dry rosemary herbs (you can put in a lot as well).
- Put your baking tray into the oven and cook at 180 degrees. I cooked it for 10 minutes but be your own judge for that.
- After my 10 minutes, I took out the tray, sprinkled my onion (and mushroom) on top of everything, and put the tray back into the oven.
- When it seems to be almost done, say another 7-10 minutes, I raised the temperature up to 200 degrees and then left that to bake for 1 minute, then turned off the heat.
- Arrange everything well, get a glass of red wine, and it is done!
Note: if this all seems a bit vague to you, I just want to make it clear that I'm only sharing this recipe which I came up with by experiment a year ago but you can find very similar recipes online that might be more accurate than mine written by professionals :) have a nice meal~
For my older readers, you might recall I cooked a very similar dish last year (and I still cook it frequently until now. But this time I use pork and I realise it tastes better than with chicken.)
